Figuring out Fats, a talk by Steve Blake, author of Vitamins and Minerals Demystified (McGraw-Hill, 2008). I have been studying up on dietary fats and blood fats for a new book. I will share some basic information on triglycerides, phospholipids, and cholesterol. Processing of oils results in some important changes in their nutritional value. The fragile essential fatty acids need more attention in any diet (fish oils are not essential). How the long-chain omega 3's, DHA and EPA, are made in the body is important. Prostaglandins are made from essential fatty acids and control inflammation, blood pressure, and clotting. I also want to share how excess dietary sugars and refined starches can be converted into excess blood and body fat. Since trans fats account for double the amount of other food additives together, they need more attention as well. We will look at the right amount of the right oils for optimum health.
